Our Chef

The 49-year-old self-taught Kuala Lumpur-born Chef who began his career as an apprentice at the Equatorial Hotel, worked his way up the culinary ranks to Head Chef of Sage, 29 years later. His strong love and passion for French cuisine with a Japanese twist, remains true throughout his tenure of over 11 years at the fine-dining Sage.  Having worked with many well-known chefs, Daniel has picked up various styles and techniques which drives his imagination to the plate. 

"Food is like a work of art. The plate is my canvas. The ingredients are my paint. The customers are my critique", exclaims Daniel who also revels in strong Italian and Australian flavors as positive influences in his menu creation aside to French and Japanese at core. By using the freshest vegetables provided by organic farmers from Cameron Highlands and supplies sourced from Japan, France, India and Hong Kong; Chef Daniel makes each dish special; cleverly curated to cater to the taste buds of the affluent gourmand.  He aspires to bridge a strong bond between Chef and guests at each dining soiree. 

Charming in character and high spirited in nature, Daniel’s influence is key towards taking Sage to the next level.

 

Our resident Sommelier

Meanwhile, food coupled with fine wines provides for a more fulfilling and out-of-this-world experience for fine dining lovers.  With over 300 labels of wine which are exclusively sourced and made available for each dining soiree, the wine selection is hand-picked exquisitely by Sage’s very own resident Sommelier – 36 year old JS.Haritharan.  Fondly referred to by many as ‘Hari’.  This wine maestro who is well travelled to vineyards across the globe and having worked with Michelin Chefs, he is equipped with a high degree of knowledge in wines that enables him to assess wines accurately (WSET level 3 award in wines).

This knowledge and appreciation of wines, coupled with the confidence to pair them to each dish while clairvoyantly explaining its style and quality to guests, is truly a gift to Sage.  Aside to wines, Hari is the forerunner at ensuring that Sage’s service standards are kept professional at all times as envisaged by many to be “unassuming and pleasant dining experience, anytime”.
